Rebecca Currie is attempting to spend an entire month eating for an average of just one dollar a day. And if that’s not already hard enough, she’s attempting to do it by eating healthy and fresh foods.
The experiment started when she read a New York Times article about how junk food is generally cheaper than healthier options, and the story ended with the following statement:
“I challenge anyone to try to live on a dollar a day and eat fresh food in this country,”
Well, Rebecca has taken the bait, and will be attempting to prove that it is in fact possible. As of now she is on Day 21, and the challenge is going reasonably well. You can check in on her progress at Less is Enough.
