Food and restaurant consultant Clark Wolf is quoted as saying, “Steakhouses are the gold of the restaurant business – a safe place to park your money. In this economy, people want to know that they are getting something real and restaurateurs want security.” Apparently the beautiful pink hue of a perfectly cooked steak trumps the novelty of molecular cuisine or restaurants with more modern fare.
